Because you only want the strong death rattles. Infest can give you some pretty sub-par minions from N'Zoth.

i do believe [card]N'Zoth, the Corruptor[/card] doesn't trigger minion which their deathrattle from Infest

I had a very similar idea for a deck but did actually include Infest since this deck will have such a sticky board. Here's what I came up with.

No synergy with N'zoth and Forlorn Stalker.  Though given all the token cards it would still probably be good here.  Drop the traps and Bow, or the Firebat

You need the bow. It lets you trade till you can play N'Zoth. The idea is to stall the game and then play N'Zoth and win with insane board pressure. You dont really need infest to do that. Just play better death-rattles.

I might actually try using this deck to climb the ladder for the first few days of the xpac
